On my husband’s 25th birthday (he was not my husband then), I wanted to do something special. I was thinking so hard of what to do that would surprise him out of his wits. My ideas was to give him 25 gifts! If only I could think of 25 things!! I almost gave up, but thankfully, my sisters-in-law came to my rescue. One of them suggested that I cook something for him. He’s a big foodie. He loves to eat. If you ask him, food or a Swiss bank account, he will probably say food! Well, you know what I mean.
Anyway, I thought her idea was nice, although I had never cooked a meal before. But I took on the challenge and approached the ever knowledgeable Google for recipes. I was so motivated because my husband was always so good at giving me surprises and I knew this is one surprise that would cause him to drop his jaw. I could hardly contain my excitement. Long story short, I cooked about 10 things and bought 15 things; together it made 25 things. Phew!
But that day taught me something very important; that if I am motivated to do something, I can! Someone who’s never cooked a meal before made 10 dishes in one morning. I remember my mum’s shock when I told her about this.
One of the dishes I made that day was pork vindaloo. When my sisters-in-law were putting together a video for my bridal shower, my husband told them that the pork vindaloo I made for his 25th birthday was his favourite dish. But I have never made it again in the 3-plus years of our married life! I searched for the same recipe I used but could never find it. Sigh!
But today I made another pork dish which reminded me of the pork vindaloo I made that day. I saw my husband licking his hands away to glory and that’s when I thought I should write this down before I forget the recipe.
So, if you are a person who adores pork dishes like my husband, this dish is for you. You can just mix it with some hot steamed rice and voilà!
Ingredients
For marinating:
Vinegar: 2 tsp
Soy sauce: 2 tsp
Salt: 1 tsp
Pepper powder: 1 tsp
Pork :1 kg
For curry:
Cooking oil
Onions: 2-3 medium ones
Tomato: 1 big one
Green chillies: 3-4
Ginger garlic paste: 2-3 tsp
Curry leaves: about 15
Coriander powder: 2 tsp
Chilli powder: 1 tsp
Turmeric powder: 1 tsp
Meat masala: 1 tsp (If you don’t have meat masala, you can use garam masala)
Salt: according to your taste
Marinate the pork in all the marinating ingredients and keep it covered for 30 mins. Then cook the pork in a pressure cooker until 3 whistles or till the pork is cooked. Set it aside.
In a big pan, heat oil and sauté the onions till they are translucent. Add the ginger garlic paste and green chillies and stir for about a minute. Now add the curry leaves and stir for 30 seconds. Then add all the masala powders. Stir continuously till the onions are brown. Next add the tomato and salt and give it a good stir. Now transfer the pork from the pressure cooker into the pan and mix everything well. Keep the pan closed and cook it on medium heat for 10-15 mins.
Serve hot with steamed rice.
